Easy Vegetarian Stir-fry
A quick and healthy stir-fry, perfect for a weeknight dinner, loaded with vibrant vegetables and packed with flavor.
Ingredients
- 2 cups of mixed vegetables (like bell peppers, carrots, and snap peas)
- 2 tablespoons of soy sauce
- 1 tablespoon of olive oil
- 2 garlic cloves, minced
- 1 teaspoon of grated ginger
Directions
- Heat the olive oil in a large pan over medium heat.
- Add the minced garlic and grated ginger, sautéing for 30 seconds.
- Add the mixed vegetables to the pan and stir-fry for 5-7 minutes, or until tender yet crisp.
- Stir in the soy sauce and cook for another 2 minutes.
