Easy Vegetarian Stir-fry

A quick and healthy stir-fry, perfect for a weeknight dinner, loaded with vibrant vegetables and packed with flavor.


Ingredients

  • 2 cups of mixed vegetables (like bell peppers, carrots, and snap peas)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon of grated ginger

Directions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for 30 seconds.
  3. Add the mixed vegetables to the pan and stir-fry for 5-7 minutes, or until tender yet crisp.
  4. Stir in the soy sauce and cook for another 2 minutes.
  5. Serve hot over rice or noodles.
